I forget--do you make sausage? stew? something else?
I've never tried to make sausage but I'd like to. For my buck we got the backstrap and round cut up into steaks, then chopped the rest for "stew" meat. The quotes are because I will probably use a little for stew but most for Chinese and Mexican dishes. Venison makes a great "Beef with Broccoli" and great tacos.
Deer tacos. I can't even imagine.
